Salmon with vegetables à la Jan

Serves 4-6:

Skinless side of salmon

1 red chili, deseeded and sliced thinly

2 stalks of lemongrass

Few sprigs of dill

Few slices of pickled ginger

Haricots verts (steamed in advance and left to cool)

Iceberg lettuce leaves

Olive oil

Walnut oil


Fresh coriander

Green pitted olives


Boiled (new) potatoes (left to cool)


Baking paper

‘We will be standing in the kitchen together and Jan will constantly be calling out: oh, I’m going to cook you something so delicious’

Preheat the oven to 180°C. Place the salmon on the baking paper and sprinkle with olive oil, salt and pepper. Add the chili, dill, pickled ginger (keep some behind) and crushed lemongrass. Fold the paper into a closed packet. Place in the oven and cook for 20 minutes. Remove the salmon, place on a serving dish and decorate with the remaining ginger, fresh coriander, olives, potatoes and salad leaves with haricots verts, sprinkled with walnut oil. Mix the mayonnaise with some wasabi and a pinch of salt.
